Ingredients

  • 3 medium ripe bananas
  • ½ cup Miracle Whip dressing
  • 1 egg
  • 1 teaspoon vanilla
  • 1 ½ cups all purpose flour
  • 1 cup sugar
  • ½ cup walnuts chopped
  • 1 teaspoon salt
  • 1 teaspoon baking soda

Instructions

  • Preheat oven to 350°F. Grease an 8" bread pan with butter and flour. Set aside.
  • In a pan over medium heat, toast walnuts for 3-5 minutes. Remove from heat.
  • In a stand mixer or with an electric mixer, mash bananas until smooth. Add Miracle Whip, egg, and vanilla. Mix until smooth.
  • In a separate mixing bowl, combine flour, sugar, salt, baking soda, and toasted walnuts. Add to wet ingredients and stir with a spatula to combine, without overmixing.
  • Pour batter into prepared bread pan. Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  • Allow banana bread to cool for 5 minutes before removing from pan. Place on a wire rack to cool completely before slicing.

Notes

Toasting the walnuts is an extra step, but tastes delicious.
If the top of the banana bread browns too quickly, cover it loosely with foil.
Cracking on top of the banana bread is normal.
Tossing the walnuts in the dry mixture prevents them from sinking in the batter.
