Pink Chocolate Covered Strawberries

Bright strawberries are wrapped in decadent pink chocolate for the ultimate Valentine's Day treat.

Ingredients

  • 2 pounds strawberries about 24
  • 2 cups white chocolate chopped
  • red food coloring to taste

For Decorating:

  • toothpicks
  • sprinkles
  • edible glitter
  • piping bags

Instructions

  • Set up working station. Line a baking sheet with parchment paper. Add bowls with different decorating materials. Wash and dry strawberries.
  • Fill a medium pot ½ full with water over high heat. Once hot, reduce heat to medium-low. Place a bowl over pot with white chocolate. Melt, stirring constantly with a spatula to scrape sides of bowl until chocolate is melted.
  • Divide chocolate into 2 bowls, ⅔ in one and ⅓ in the other. Use 3 drops of red food coloring in the bowl with 2/3 cup and add more as needed, mixing between additions, until desired tone of pink is achieved.

To Decorate:

  • Working with cold strawberries, insert a toothpick into the stem of the strawberry. Dip it in chocolate ¾ of the way to the stem. Spin strawberry, allowing excess chocolate to drip back into bowl before placing on prepared baking sheet to set.
  • If decorating with sprinkles and other decorations, add immediately before chocolate has set.

Notes

Work with chilled strawberries to allow chocolate to set quickly. 
If chocolate begins to harden before strawberries are dipped, microwave on high for 30 seconds. 
Toothpicks will help keep strawberry stems intact, and are easier to work with than holding the leaves with your fingers.
